Ingredients
  

For the Smoked Our Family Salmon Fillets:-

  • 1 lb Our Family Salmon Fillets
  • Olive oil for brushing
  • Salt and pepper to taste
  • Cherry or applewood pellets for Traeger smoker
  • Butcher paper for smoking

For the White Rice Bed:

  • 2 cups white rice
  • 4 cups water
  • Pinch of salt

For the Spicy Pineapple Mango Salsa (Pre-Smoked):

  • 2 ripe mango halved and hatched
  • 1 cup pineapple rings
  • 1-2 jalapenos diced (adjust to your spice preference) - optional smoked or not smoked, add additional for more spice

For the Fresh Pineapple Mango Salsa (Post-Smoked):

  • 3 cup diced mango from the pre-smoked mango
  • 2 cup diced grilled pineapple
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

    Prepare the Pineapple Mango Salsa (Pre-Smoked):

    • a. Preheat your Traeger pellet smoker to 180°F.
    • b. Halve the mango, hatch it, and flip the halves outward on the grates, fruit facing up and peel facing down.
    • c. Place pineapple rings and diced jalapenos directly on the Traeger grill grates.
    • d. Smoke the mango, pineapple, and jalapenos for approximately 30 minutes, allowing them to absorb the delightful wood-fired flavor

    Prepare the Smoked Our Family Salmon Fillets on a Traeger Pellet Smoker:

    • a. Brush the Our Family Salmon Fillets with olive oil and season with salt and pepper to taste.
    • b. Preheat the Traeger pellet smoker to 400°F.
    • c. Place the seasoned salmon fillets directly on Traeger's butcher paper.
    • d. Smoke the Our Family Salmon Fillets for 15-20 minutes, allowing them to absorb the smoky goodness to complement the spicy mango, pineapple, and jalapeños.

    Cook the White Rice:

    • a. Rinse the white rice under cold water until the water runs clear.
    • b. In a medium saucepan, combine the rice, water, and a pinch of salt.
    • c. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes or until the rice is tender.

    • a. Dice the pre-smoked mango and combine it with the grilled pineapple, red onion, cilantro, and lime juice to create the fresh Pineapple Mango Salsa.
