Peanut Butter Crispies Bars

I love cooking and baking and always have. I often joke that I am an old soul because of my love for both, and I often tweak and make my own recipes.

My husband always tells me I need to write down my recipes and save them so when I make something he likes, which is pretty often, I can make it again.

I wanted to make a twist on scotcheroo/rice crispies that was unique but still a tasty treat and this is a little something I whipped up

I used the pre-made Reeses peanut butter cookie dough just as a time saver, because as a busy mom there are times that I love a quick short cut, and they taste delicious. We got the safe to eat the dough kind and a few of the cookie pucks may not have made it into the pan…

Peanut Butter Crispies Bars

The Ingredients

Marshmallows

Peanut Butter

Buterscotch Chips

Butter, I used a non-dairy

Rice Cereal

Semi sweet chocolate chips

Reese Peanut Butter Cookies or your own peanut butter cookie dough

Non-stick spray

Baking sheet

Making the Peanut Butter Crispies Bars

Spray the pan with a non stick liner

Press the peanut butter cookie dough into the bottom of the pan, completely covering the pan

Bake at 350 for approximately 10-12 minutes or until cookie layer is nearly fully cooked

While cookie is baking, melt half a stick of butter in a medium to large sized frying pan

Add about half a bag of butterscotch chips, probably around a cup and a half to two cups

Mix in roughly one cup peanut butter to butterscotch chips and butter

Stir until smooth and fully melted

Add in two cups mini marshmallows and stir until marshmallows are completely melted as well

In a large mixing bowl, measure about four cups of rice cereal

Add peanut butter butterscotch marshmallow mixture to rice cereal and mix until the two are well combined

Take peanut butter butterscotch marshmallows rice cereal mixture and add to baked peanut butter cookie dough

Spread mixture out and flatten like a rice crispie bar

If desired, take and sprinkle chocolate chips on the tip and pop back in the oven for two minutes to melt the chocolate

These bars are good but super messy fresh from the oven but set up as a nice bar once cooled
