Fall is basically casserole season in our house. When the weather turns, the kids start wanting to stay inside, and suddenly I’m very motivated to throw things into a baking dish and let the oven do the work. There’s something about a bubbling casserole coming out of the oven on a chilly evening that just feels like exactly what dinner should be.

I’ve been making casseroles my whole life, my grandma made them, but I’ve really leaned into them since Camden’s dairy and egg allergies came into the picture. A lot of classic casserole recipes are basically held together by cream of mushroom soup and shredded cheddar, so I’ve had to get creative. The good news is that most of them are incredibly easy to adapt, and honestly, some of my dairy-free versions taste better than the originals.
