Hot Corn has been a staple at our holiday gatherings for as long as I can remember. It’s creamy, a little spicy, and somehow manages to be the most talked-about dish on the table even when it’s sitting next to a full roasted turkey and three kinds of pie. Shane piles it on his plate like it’s his last meal.

That last part is the piece that made this recipe feel worth sharing. Grandpa Mike’s original version uses regular cream cheese and butter, which is absolutely delicious. But as our family has grown and Camden’s food allergies entered the picture, we started quietly swapping a few things so he could dig in right alongside everyone else. Nobody at the table noticed the difference. That felt like a win worth writing about.

  • It feeds a crowd without any stress. Four cans of corn stretch surprisingly far. Double the batch and you’re feeding a full holiday table without breaking a sweat.
  • The heat level is totally customizable. More jalapeรฑos, fewer jalapeรฑos, skip the serrano, add a habanero if you’re feeling bold. This recipe is completely forgiving.
  • It travels well. Make it ahead, stick it in the fridge, and bring it to the gathering. Done.

  • 4 cans of corn, drained
  • 1 container (8 oz) dairy-free cream cheese (we like Violife, Better Goods, and Philadelphia)
  • 1 tablespoon dairy-free butter
  • 3 to 4 jalapeรฑos, diced
  • 1 serrano pepper, diced
  • Salt and pepper to taste

Optional: Swap in any hot peppers you enjoy. Habaneros will crank up the heat significantly. Poblanos will mellow it out. Use whatever fits your crowd.

How to Make Grandpa Mike’s Holiday Hot Corn

  1. Drain the corn. Open all four cans and strain out the liquid completely. Pour the corn into a large mixing bowl or a casserole dish.
  2. Add the dairy-free cream cheese. Drop the entire container right on top of the corn.
  3. Add a pad of dairy-free butter. You want it to be able to melt down into everything and get into every corner of the dish.
  4. Season with salt and pepper. Do this to taste. Start with a little, mix, and adjust from there.
  5. Dice and add the peppers. Dice your jalapeรฑos and serrano pepper and add them to the bowl. If you or anyone at your table has a lower heat tolerance, remove the seeds and membranes from the jalapeรฑos before dicing. That cuts the heat without losing the flavor.
  6. Mix everything together. Stir until the cream cheese and butter are evenly distributed throughout the corn and peppers.
  7. Decide: cold or warm? Serve it cold straight from the fridge for a thick and creamy spicy corn side. Or warm it in the oven at 350 degrees Fahrenheit for about 20 to 25 minutes, stirring once halfway through, for a hot, melty, buttery version. Both are legitimately great.

Make It Ahead

This recipe is genuinely better when it has a few hours to sit. Mixing it the night before and refrigerating it overnight lets the cream cheese absorb into the corn and the pepper flavor bloom throughout the whole dish. If you are bringing it to a holiday gathering, assemble it at home and warm it up when you arrive.

Adjust the Heat Your Way

Three to four jalapeรฑos plus one serrano gives this a solid kick without being overwhelming for most adults. If you are feeding kids or heat-sensitive guests, pull it back to two jalapeรฑos and skip the serrano. If you love real heat, add a habanero or two, or leave the seeds in everything. There is no wrong answer here.

Served cold with tortilla chips, this becomes one of the best party dips you will ever put out. We have done this for game days and every single person asks for the recipe before they leave.

Double the Batch

For a larger holiday crowd, use eight cans of corn and two containers of dairy-free cream cheese. The ratios stay the same and it scales up without any issues.

Frozen or Fresh Corn

Canned corn is what Grandpa Mike uses and what the recipe is built around, but frozen corn works too. Just thaw and drain it well before mixing. Fresh corn cut off the cob is also wonderful in the summer if you want to bring this dish to a cookout or backyard gathering.
