If you know me, you know I love cooking and baking BUT sometimes I want a quick and easy treat that doesn’t take me all afternoon to prepare.
I pulled together this Easter treat in just 30 minutes and under $20. For this recipe, I used a mini cupcake pan, a $1, box of strawberry cake mix, oil, water, eggs, strawberry whipped cream cheese, some fresh raspberries, and some fruity jelly beans.
Follow the instructions on the box to bake the cup cupcakes-adding water, oil, and eggs to the cake mix. Regular cupcakes bake 20-25 minutes, mini cupcakes bake 12-15 minutes.
After cupcakes have cooled slightly, frost some with whipped strawberry cream cheese, add fresh berries and jelly beans.
For a fun Easter twist, arrange the cupcakes in an Easter egg shape, using the frosted and non-frosted combination to create a decorated egg.
